The production of Ferrarini cured raw ham is proof of the company's skill in always combining tradition with innovation to offer a healthy quality product.The wide range of Ferrarini Cured Raw Hams is produced in the Lesignano de’ Bagni factories on the banks of the Parma river, opposite Langhirano, world-famous for its Parma ham.
The raw materials are supplied by selected national and European breeding farms, subject to controls on animal genetics, cattle feed safety and health and hygiene conditions. In the EFFE factory, which was the first to be awarded ISO 14001 certification for environmental impact, master ham makers trim, salt and carry out all the delicate stages of processing, according to ancient local tradition.
The long curing process takes place in special rooms where temperature, humidity and air quality are constantly controlled by cutting-edge technologies that use exclusive patents registered by Ferrarini. Each production factor is identified and recorded so that all Cured Raw Hams processed by the Ferrarini Production Chain can be traced back and the production history of each one of them is known. The EFFE 3 factory also has a line dedicated to the production of sliced cured meats, especially Parma ham produced according to the specification for the PDO "Prosciutto di Parma".
